BBQ Chicken & Vegetable Pouches

Ingredients
1/4 cup Wish-Bone® Light Italian Dressing
1/4 cup barbecue sauce
1 lb. boneless, skinless chicken breasts or thighs, cut into 1/2-inch cubes
1 medium onion, coarsely chopped
1 medium red bell pepper, coarsely chopped
1 can (15 oz.) black beans, rinsed and drained
1 Tbsp. chopped fresh cilantro
2 cups cooked brown rice
  1. Preheat oven to 425°.
  2. Stir together Wish-Bone® Light Italian Dressing and barbecue sauce in large bowl. Add chicken, onion, red pepper and beans and toss to coat.
  3. Evenly divide mixture on four 12 x 18-inch pieces heavy-duty aluminum foil. Wrap foil loosely around chicken mixture, sealing edges airtight with double fold. Arrange pouches seam-side-up on baking sheet. Bake 20 minutes or until chicken is thoroughly cooked.
  4. Carefully open pouches and sprinkle with cilantro.
  5. Serve with hot cooked rice.
TIP: In order to grill pouches, place on grill over medium heat and grill 15 minutes, turning once.
